The first michelin star for Ibiza
The first Michelin star has landed in Ibiza this autumn 2019. The restaurant ES Trágon of San Antonio was honored with its first Michelin star and first one for the island.
Es Trágon is a restaurant with a cuisine that we can define high level,
but mainly focused on the tradition. The creativity and respect for the raw materials are the identity points of the young chef Álvaro Sanz Clavijo. The chef defines his cuisine as “fine dining with traditional bases and audacious touches”.
This young chef has made his professional experience working with renamed chefs as Santi Santamaria, Martín Berasategui or Joël Robuchon. Before coming to Ibiza, he also was in charge of the kitchen of the Arzak restaurant in Mexico.
Creative cuisine, with Mediterranean roots and Mexican touches, an explosive combination which granted him a reward for his quality with this excellent prize.
Es Tragón opened in 2016 on the road between Cala Gracioneta and Cap Negret. In this period of the year it’s closed for the season but will reopen on April 2020.
Besides having a Gastrobar menu from which you can choose whatever you prefer, there are other two menus: Erizo (90€) and Trágon (130€).

The dishes change every season in order to offer a unique experience each time you repeat. We cannot forget to mention the roguish botijo, homemade cold cuts, Mary’s oysters, crab burger, grilled calamari,
prawns with eggs, black pork carpaccio, the carribao or the MX chicken.
For those that have the pleasure to visit this marvelous restaurant must know that its main gift is the surprise. Everything is made to make its guests happy, but most of all to offer an absolutely magic experience.
